Makes about 35-36 dumplings
35-36 dumpling wrappers
300g green pumpkin (cut into small pieces)
200g spinach (washed and chopped)
150g kudzu (peeled and diced)
1 tbs minced ginger
2 tsp Himalaya salt
1 tsp turmeric powder
3 tbs avocado oil
1. In a pot, bring water to boil, put in pumpkin and steam for 10 minutes; covered and let sit for another 10 minutes. Heat one tablespoon of oil in pan, put in ginger and lightly fry until golden. Add in spinach and kudzu; quickly sauté for a minute or until tender. Turn off heat and set aside.
2. In a big bowl, put in pumpkin and mash until no big chunks are left. Add in spinach mixture and stir in turmeric and salt; combining well.
3. Put about one tablespoon of pumpkin filling into the centre of a dumpling wrapper, brush the edges of the wrapper with water. Shape it like a purse. Repeat steps until all the fillings are finished. You will make about 35-36 dumplings.
4. Brush oil over dumplings. Bake in a pre-heated oven at 225C for 20 minutes or until golden. Serve warm. Enjoy!
