1 red chilli pepper
2 lime leaves
5-6 slices galangal
1 lemon grass (cut into 4 pieces)
Half of an onion
4 garlic cloves
1 tsp cumin powder
1 tbs avocado oil
2 slices of pumpkin (cut into small pieces)
1 green pepper (cut into small pieces)
1 pack enoki mushroom (cut into two parts)
6 fresh brown mushrooms
6 beancurd sticks (pre-soaked)
250 ml coconut milk
250 ml water
2 tbs miso
1 tbs sugar
10 basil leaves
1 Put all ingredients 1 into a food processor and process until it becomes paste-like.
2 In a pot, put in oil and chilli paste; cook for one minute. Put in all ingredients 2; slowly add in coconut milk and water; boil for several minutes. Season with miso and sugar to taste and cook for another few minutes. Put in basil leafs and turn of heat.
3 Drizzle on top some more coconut milk. Serve warm. Enjoy!
